Turkey Mexican Meatballs
1 Pound Extra Lean Ground Turkey (the kind I buy has 4 total grams of fat in a pound)
1/4 Cup Lowfat Cheddar Cheese
2 Stalks Celery
1 Sweet Onion
1/4 Teaspoon Cumin
1/4 Teaspoon Thyme
1/2 Teaspoon Chipotle Pepper
1 Teaspoon Horseradish Mustard
Dice celery and onion. Mix all spices in separate bowl. Add celery and stir until well coated. Add mustard to celery mixture and stir until mustard is distributed evenly. Add turkey to mixture and mix well. Divide into eight portions and roll into balls. Bake at 375 degrees for 40 minutes.
