Body Builder Meals – Turkey Mexican Meatballs

These meatballs are great because you can whip up a double batch and keep them in the freezer. They are so easy and convenient when you’re running short on time. Combine them with rice or a salad for an instant Body Builder Meal!

Turkey Mexican Meatballs


1 Pound Extra Lean Ground Turkey   (the kind I buy has 4 total grams of fat in a pound)
1/4 Cup Lowfat Cheddar Cheese
2 Stalks Celery
1 Sweet Onion
1/4 Teaspoon Cumin
1/4 Teaspoon Thyme
1/2 Teaspoon Chipotle Pepper
Adobo Spice
1 Teaspoon Horseradish Mustard

Dice celery and onion. Mix all spices in separate bowl. Add celery and stir until well coated. Add mustard to celery mixture and stir until mustard is distributed evenly. Add turkey to mixture and mix well. Divide into eight portions and roll into balls. Bake at 375 degrees for 40 minutes.
